I went to Menkui-Te on 3rd avenue and St. Mark’s Place. Not that it’s the most special ramen in the world, just that it’s actually been quite a while since I’ve gone there. For a little while I was going at least once a week, but I think it’s been a couple months since I last went. Mmmm, brown eggs.

If you don’t know what brown eggs are you owe it to yourself to seek them out. Basically you have hard boiled eggs that you then stew for about an hour inside a meat stew with soy sauce, various other spices. I think you do this for about an hour for a couple days and eventually the egg soaks up all that spicy meaty goodness and becomes brown. These eggs are known for disappearing quickly when there’re multiple people around. Or just one very hungry person is around. My mom makes delicious brown eggs. I have the feeling that the ones they have at Menkui-Te aren’t given as much time to stew because it’s a restaurant and you probably can’t be wasting time on something like that when the type of food you serve is generally the fast kind.
